Farm Focus: Las Lajas Costa Rica

If you were to venture into the foothills of the Poás Volcano in Costa Rica’s Central Valley you would find one of the finest coffee growers and producers in the world. Las Lajas Farm has been operating since 1840 and current owners Oscar and Francisca Chacon are committed to maintaining and building on that legacy.

Oscar inherited 5 hectares at the age of 18 in 1980 after his father died of pesticide related disease. After the tragic passing of his father Oscar and Francisca made the decision to transition to organic farming, a tremendous risk at the time with little or no premiums being paid for organic coffee. While Oscar and his mother kept the farm running Francisca attended University and obtained an agricultural degree in Coffee. Oscar and Francisca would be married in 1997.

The Chacons were not done innovating yet. In 2006 they opened up their own coffee mill and while production was slow initially, only 20 bags the first year, they quickly grew. Today their coffee mill processes over 2000 bags of coffee, including lots from nearby relatives and other small farms.

After an Earthquake hit San Jose Oscar realized how precarious the water and power situation could be, so they began to experiment again. The Chacons became leaders in the natural and honey process which produced coffee unlike anything produced in Costa Rica previously. Today Las Lajas farm offers yellow, red, and black honeyed coffees. These selections include our own Costa Rica Las Lajas Red Honey, Costa Rica Las Lajas Red Honey Dark Roast, our award winning Costa Rica Las Lajas Perla Negra, and our latest offering The Costa Rica Las Lajas SL-28.

The latest offering from Las Lajas farm is even more evidence that the Chacons are not done innovating. Las Lajas began growing SL-28 which is a Kenyan variety that has shown excellent drought and disease resistance while maintaining the beautiful fruity and floral notes that Kenyan coffees are renowned for. Given the quality of coffee we’ve received from Las Lajas in the past we could not wait to try this new variety. And we were not disappointed! Our SL-28 is a lightly roasted coffee that has incredible notes of mango and strawberry with a syrupy body and lingering finish.

Red Honey– Las Lajas has been experimenting with the natural and honey process for several years now. Their Red Honey process leaves on almost all of the mucilage.  Our roast is light to preserve the natural flavors of magnolia, chocolate, and caramel.
Dark Roasted Red Honey– This coffee is processed identically to the regular red honey, but roasted darker to bring out the bolder flavors our customers love!
Perla Negra– is 100% Natural process where the whole dried cherry is turned on raised African beds. Our most awarded coffee! Our Perla Negra in 2024 was rated 95 by coffee review and won a bronze medal in The Golden Bean for drip coffee. SL-28– Our newest offering from Las Lajas! SL stands for Scott Labs which identified this variety of coffee tree in the 1930s. Initially planted exclusively in Kenya the SL-28 has since been imported to the Americas with incredible results. Our SL-28 is lightly roasted and has beautiful notes of mango and strawberry to go along with a smooth body.
