Sicobi Coop focuses on holistic sustainability in coffee production is the approach alongside community and environmental health, with a focus on long-term land stewardship.
Six mountain communities participate, with locally trained technicians visiting farms and collecting data and advising producers.
This coffee is grown at an ideal elevation of 1,500 – 1,800 meters with large temperature swings between day and night which lead to slow cherry development and more complex flavors.
Selective picking along with a 48 hour fermentation give this coffee a sweet complex cup.
